Who Is Mistral Dawn?

Mistral Dawn is a thirty-something gal who has lived on both coasts of the US but somehow never in the middle. She currently resides in the Southeast US with her kitty cats (please spay or neuter! :-)) where she works as a hospital drudge and attends graduate school. Taken By The Huntsman is her first effort at writing fiction and if it is well received she has ideas for several more novels and short-stories in this series. Please feel free to visit her on FaceBook or drop her a line at mistralkdawn@gmail.com

Cream #Sauce Goes With Everything ;-)

Hey Everyone! :-)

Today, I wanted to share a recipe for one of my favorite sauces.

Ingredients:
2 tbs olive oil
1 tbs butter
10 cloves garlic chopped
1 medium onion chopped
1 tomato diced
2 cups half and half
1 16 oz package sliced button mushrooms
1 cups raw baby spinach leaves
1 cup chopped broccoli
2 tsp Italian seasoning
1 cup shredded mozzarella cheese
Salt and pepper to taste

Put the olive oil, butter, and onion in a skillet and cook until the onion becomes translucent. Add the garlic, mushrooms, and tomato, and cook for a couple more minutes.  Add the half and half, Italian seasoning, salt, and pepper, and stir ingredients together. Add the spinach and broccoli, and stir to combine. Heat until the cream starts to bubble and add the cheese. Stir until the cheese melts and combines and remove from the heat.

If you'd like a thicker, richer sauce, you can use heavy cream instead of half and half. If you'd like a lighter sauce, you can use whole milk instead of half and half. If the sauce becomes too thick, you can add a little milk until it reaches the consistency you prefer. You can also add or substitute any vegetables you'd like. Peas go well with this sauce, as does kale, collard greens, mustard greens, carrots, and cauliflower.

This sauce can be served over a baked potato, sliced potatoes (scalloped potato style), rice, or pasta. As always, I prefer to make this sauce without meat. But if you'd like to add meat, you can add or serve it over cooked chicken, cooked beef, or cooked pork. You could also add cooked bacon or cooked ham to the sauce. If you do decide to add meat, please make sure you cook it thoroughly because food poisoning sucks.

Bon appetit! :-)
